Electric Green Spinach Smoothie

After falling off the smoothie bandwagon for a while, we're back at the blender determined to replace the bland cereal & milk breakfast routine with something more healthy and delicious.

Here's my latest favorite: a spinach cucumber mango green smoothie! Spinach for breakfast might sound disgusting, but honestly, you can hardly taste the leafy greens once they are all blended together with the fruit. Now that summer is long gone and fresh fruit is a distant memory, we are improvising with Goya's line of fruit nectars. They are insanely cheap and sooo delicious. And perfect in smoothies.

Try this one out...don't judge a smoothie by it's color!

ELECTRIC GREEN SPINACH SMOOTHIE

1 banana (fresh or frozen)
1 cup fresh spinach leaves (rinsed and de-stemmed)
1 cucumber (peeled)
1/4 cup apple cider
1 cup mango nectar juice (easily subsituted for any other nectar juice flavor)

Adjust liquids to preferred consistency...add more cider or juice for a thinner drink, less for a thicker blend. Blend well (a minute longer than you think you should) and enjoy!
